Jammy hearts

As I wasn’t working on Valentine’s Day, I decided to bake these jam heart biscuits as I thought my girls would love them. The recipe is from BBC Good Food here. You have to shape the dough into balls, then squeeze two together on grease proof paper, keeping the round ball shapes at the top, […]

Slow Cooker Lemon and Mixed Berry Self-Saucing Pudding

This recipe for slow cooker lemon and mixed berry self-saucing pudding was inspired by a slow cooker Facebook group I follow called Slow Cooked Wonders. I love a fruit pudding and decided to use a mix of blueberries, raspberries and blackberries in my self-saucing pudding. It’s also great with strawberries in it. You make the cake mixture […]

Jam tarts

As it was freezing cold today my daughter and I made a quick batch of jam tarts together simply using ready made short crust pastry and different jams – raspberry, strawberry and lemon curd. The key thing to remember is to butter the tins so you can get them out!

Chocolate and cranberry cookies

Today I fancied baking something simple, so I looked for a biscuit recipe and found this one which I just happened to have all the ingredients for in my cupboards handily! Easily whipped up in time for my daughter have after school, they were very easy to make. I based them on a recipe found […]

Lime pie

For this recipe I bought a lovely new flan/pie dish especially, how extravagant! I fancied something fresh and found a really simple recipe on the Tesco food app of all places. I amended the recipe slightly, here is how I made it: Crush 250g of digestives, then melt 125 g of butter and mix with […]

Chocolate banana crispy cakes

I found this recipe in Edd Kimber’s book The Boy Who Bakes which I was given at Christmas. I amended the recipe slightly as I didn’t want to use Nutella. First melt three tablespoons of butter in a large pan. Add 140g mini marshmallows and stir until they have completely melted. Do keep stirring and […]

Treacle tart

I will admit upfront that I used a ready-made sweet pastry shell for this. I bought it ages ago as had never seen them before, and it seemed like a good shortcut. I have been wondering what to make with it and then came across this lovely treacle tart recipe from Marie Claire. See here […]

Carrot cake with drizzled orange icing

Carrot cake is gorgeous and I wanted to try my hand at it. I used a recipe from the BBC Good Food baking book, and it was very tasty. The book I used is this one again. The icing was runnier than I’d have liked but it was still nice to eat luckily!
