Oat and Raisin Cookies

Simple oat and raisin cookies ideal for snacks

  • Place the butter and two different sugars in a large bowl. Beat together with a wooden spoon (or hand mixer) until the mixture is soft and creamy.
    40 g demerara sugar, 85 g golden caster sugar, 120 g unsalted butter
  • Add the egg and vanilla bean paste and beat well.
    1 medium egg, 1.5 tsp vanilla bean paste
  • Sift in the flour, oats, baking powder and salt.
    175 g plain flour (all-purpose flour), 25 g oats, 0.5 tsp baking powder, pinch of salt
  • Mix together with a wooden spoon until the mixture starts to come together.
  • Add the raisins and mix into the dough roughly.
    30 g raisins
  • Form small balls of the dough and place on a lined baking tray.
  • Bake for 20-25 minutes at 180℃ / 350℉, or until lightly golden.
