Easy Cranberry and Pistachio Palmiers

An easy and impressive festive bake using ready-rolled puff pastry, puff pastry palmiers with cranberry and pistachio filling.

Ingredients

  • 375 g sheet of ready-rolled puff pastry
  • 100 g pistachios shelled and chopped
  • 100 g cranberries
  • 1 beaten egg for egg wash
  • icing sugar to dust

Instructions

  • Spread the cranberries and chopped pistachios over the pastry sheet. Roll them in gently with a rolling pin.

  • Roll up tightly along one of the long sides, to the centre, then start again at the other side and do the same again to make the classic palmier shape.
  • If you have time, chill now. I didn't have time and they turned out fine I thought so don't worry too much if you don't have time.
  • Using a sharp knife, cut into 1 cm pieces. Place on a baking tray.
  • Brush the egg wash over the pastry.

  • Bake at 200℃ / 390℉ fan for 25 to 30 minutes or until golden brown and crisp.
  • Dust with icing sugar and serve!
