Mix all the ingredients except the chicken breasts together in a bowl.
1 red onion, 1 tsp lazy garlic, 1 tsp lazy ginger, 1 red chilli, 9 tsp light soy sauce, 1 tbsp veg oil, 1 tbsp red wine vinegar, juice and zest of half a lime, 1 tbsp caster sugar (superfine sugar)
Oil the slow cooker pot lightly to prevent sticking.
Place three chicken breasts in the pot and the other ingredients on top, mix to cover.

Cook on high for 3-4 hrs or low for 5-6.
Serve with a fresh coriander garnish and squeeze a little more lime juice over the top.
