These easy strawberry tarts are made with puff pastry, strawberry jam and fresh strawberries for a simple dessert that is ready in under 30 minutes. Perfect for summer entertaining, afternoon tea or a quick sweet treat.
Cut your pastry sheet into six equal rectangles and score a line on each one centimetre from the outside to form an edge. Prick the centre of the pastry squares with a fork to stop the pastry rising in the centre. Put the tart shells on two lined baking sheets.
1 sheet ready-made puff pastry
Place one teaspoon of strawberry jam in the centre of each pastry rectangle and spread it evenly.
6 tsp strawberry jam
Bake the tart cases in a preheated oven at 180°C / 350°F for 15-20 minutes until lightly golden brown and fully crisp. Allow to cool.
Add one more teaspoon of strawberry jam in the centre of each tart, spread it evenly then top with thinly sliced strawberries. Warm 6 more teaspoons of jam and drizzle over the tarts to glaze them and add shine.

Serve immediately, with whipped cream and chocolate drizzle if you like.
