Easy Puff Pastry Strawberry Tarts

These easy strawberry tarts are made with puff pastry, strawberry jam and fresh strawberries for a simple dessert that is ready in under 30 minutes. Perfect for summer entertaining, afternoon tea or a quick sweet treat.

Ingredients

  • 1 sheet ready-made puff pastry
  • 18 tsp strawberry jam
  • 200 g strawberries
  • whipped cream, chocolate drizzle optional

Instructions

  • Cut your pastry sheet into six equal rectangles and score a line on each one centimetre from the outside to form an edge. Prick the centre of the pastry squares with a fork to stop the pastry rising in the centre. Put the tart shells on two lined baking sheets.

  • Place one teaspoon of strawberry jam in the centre of each pastry rectangle and spread it evenly.
    6 tsp strawberry jam
  • Bake the tart cases in a preheated oven at 180°C / 350°F for 15-20 minutes until lightly golden brown and fully crisp. Allow to cool.
  • Add one more teaspoon of strawberry jam in the centre of each tart, spread it evenly then top with thinly sliced strawberries. Warm 6 more teaspoons of jam and drizzle over the tarts to glaze them and add shine.

  • Serve immediately, with whipped cream and chocolate drizzle if you like.

Serving Suggestions
Serve the strawberry tarts with:
  • Whipped cream
  • Clotted cream
  • Vanilla ice cream
  • Crème fraîche
  • A dusting of icing sugar
Variations
Mixed berry tarts - replace some of the strawberries with raspberries, blueberries or blackberries.
Strawberry and cream tarts - add a layer of whipped cream just before serving for an even more indulgent dessert.
Strawberry and mascarpone tarts - spread a thin layer of sweetened mascarpone over the pastry before adding the strawberries.
Chocolate strawberry tarts - drizzle the finished tarts with melted dark or white chocolate.
Raspberry tarts - use raspberry jam and fresh raspberries instead of strawberries.
Storage
  • Best eaten on the day they are assembled.
  • Store leftovers in the fridge for up to 24 hours.
  • For best results, bake the pastry ahead and add strawberries just before serving.
