    Slow Cooker Chocolate Cherry Blondies

    My slow cooker chocolate brownies (marshmallow brownies and peanut swirl brownies) were a great success so I decided to make blondies with chunks of chocolate and fresh cherry instead. Read on for my recipe for slow cooker chocolate cherry blondies!

    What are blondies?

    If you haven’t heard of them, blondies can either be like a white chocolate version of chocolate brownies (as with my white chocolate Oreo blondies) or they can even be made without melted chocolate in the batter, as I have done here.

    They still have that lovely texture of fudgy brownies even when the mixture does not contain melted chocolate.

    Of course I did add some chopped chocolate to the mixture!

    Today I had some lovely juicy fresh cherries so added a few of those too.

    Not too many though as they were so juicy I though they would make the batter too wet.

    Slow cooker baking

    Baking in a slow cooker is one of my favourite pastimes.

    Do other things while you bake and with excellent results! The slow cooker’s gentle heat means it won’t burn quickly and your bakes will be wonderfully soft.

    Plus it is cheaper than baking in a normal oven!

    Ingredients

    Here’s what you will need for this recipe, get the quantities in the recipe card below:

    • light brown sugar
    • butter
    • egg
    • vanilla extract
    • plain flour
    • baking powder
    • salt
    • milk chocolate
    • fresh cherries 

    Method

    1. Melt the butter in the microwave.
    2. Pour it onto the sugar in a large bowl, mix, then leave to cool down.
    3. Beat the egg with the vanilla extract and add to the butter mixture when cool. Mix together the flour, baking powder and salt (or use self-raising) and fold it into the mixture until just combined.Blondie mixture in a bowl.
    4. Stir in most of the chopped chocolate and cherries, leaving some to scatter on top.
    5. Grease and line your slow cooker pot. I used a large cake case but you can also use baking paper.
    6. Pour the mixture into the lined pot, then scatter the rest of the chocolate and cherries on top.Blondie mixture with chocolate and cherries, in slow cooker pot.
    7. Cook on high for 1-2 hours or until a skewer comes out clean.
    8. During cooking the blondies will rise, and the chocolate and cherries sink in slightly. Blondies cooking in slow cooker pot.
    9. Remove the pot from the base and leave to cool slightly.
    10. When cool enough to handle remove the cake case from the pot and place on a cooling rack to cool completely.
    11. Slice up and devour!

    Slow Cooker Chocolate Cherry Blondies

    Blondies are chocolate free brownies, here filled with chunks of chocolate and cherry, cooked in your slow cooker.

    Ingredients

    • 130 g (½ cups + 2 tbsp) light brown soft sugar
    • 110 g (½ cups) butter
    • 1 large egg
    • ½ tsp vanilla extract
    • 160 g (1 cups) plain flour (all-purpose flour)
    • 1 tsp baking powder
    • A few sprinkles of salt
    • 75 g (½ cups) milk chocolate chopped
    • A handful of cherries pitted and quartered

    Instructions

      130 g / ½ cups + 2 tbsp light brown soft sugar
    • Beat the egg with the vanilla extract and add to the butter mixture when cool. Mix together the flour, baking powder and salt (or use self-raising) and fold it into the mixture until just combined.
      1 large egg, ½ tsp vanilla extract, 160 g / 1 cups plain flour (all-purpose flour), 1 tsp baking powder, A few sprinkles of salt

    • Stir in most of the chopped chocolate and cherries, leaving some to scatter on top.
      75 g / ½ cups milk chocolate, A handful of cherries

    • Pour the mixture into the lined pot, then scatter the rest of the chocolate and cherries on top.
    • Cook on high for 1-2 hours or until a skewer comes out clean.

    • When cool enough to handle remove the cake case from the pot and place on a cooling rack to cool completely.

    Slow cooker size: 3.5 litre / 3 quart.

      Wow a cake in the slow cooker – I must get experimenting in mine! I basically do stews and that’s it at the moment! Your cake looks scrummy!
