     Slow Cooker Chocolate and Mint Aero Bubble Cake – a delicious chocolate fudge cake baked in the slow cooker with Mint Aero Bubbles! Baking in the slow cooker is so easy. The most popular recipe on my blog. Look in my Slow Cooker Desserts for loads more slow cooker cakes and bakes!

    So it is Good Friday and I am bringing you …..more chocolate! Well it can’t be avoided, this is the time of year for it after all. 🙂

    This slow cooker chocolate and mint aero bubble cake is a cake with a difference as it is made in my slow cooker (3.5 litre oval slow cooker).

    I decided to make a slow cooker chocolate and Mint Aero Bubble cake quite simply because I wanted to see the Aero Bubbles in a cake!

    I have seen Maltesers and similar being used in traybakes (do make the Malteser traybake, it is delicious!) but I wanted these to go in a cake, not a no-bake or brownies.

    I thought the cake would look great when sliced as you would see the green circles against the dark brown chocolate cake, as well as the bubbly texture of the bubbles against the velvety cake.

    Well that was the idea anyway!

    I saw in the traybake etc recipes that sometimes they froze the Maltesers or Aero bubbles overnight so they didn’t melt when baking.

    I didn’t have the patience for that so just went for it.

    Sometimes you just want cake then and there, am I right.

    Ready to start baking! The base is lined with baking paper.

    I would line the sides of the pot too to make it easier to get out!

    This is what it looked like after 45 mins.

    The edges are becoming firm and the Aero bubbles are melting! Just look at that rich chocolate colour, mmmmm.

    Another hour later, after adding more Aero Bubbles in the centre.

    The cake is starting to firm up.

    Finished, after two and a quarter hours. Yummy, rich and fudgy chocolate cake topped with minty chocolate!

    Ingredients

    • 190 g (1.5 cups) plain flour (all-purpose flour)
    • 1 tsp baking powder
    • 50 g (0.66 cups) cocoa powder
    • 200 g (0.9 cups) light brown sugar
    • 125 g (4.5 oz) butter
    • 3 eggs
    • 180 ml (0.75 cups) milk I used semi-skimmed
    • 1 large share bag of Mint Aero Bubbles

    Equipment

    Instructions
     

    • Grease and line the slow cooker bowl.
    • Mix the flour, baking powder and cocoa powder in a large bowl.
      190 g / 1.5 cups plain flour (all-purpose flour), 1 tsp baking powder, 50 g / 0.66 cups cocoa powder
    • Cream the butter with the sugar then add the eggs slowly, mixing after each addition.
      200 g / 0.9 cups light brown sugar, 125 g / 4.5 oz butter, 3 eggs
    • Add the milk and whisk until smooth.
      180 ml / 0.75 cups milk
    • Fold in the flour mixture.
    • Pour the cake batter into the slow cooker bowl.
    • Add about half the Mint Aero Bubbles, scattering them over the top.
      1 large share bag of Mint Aero Bubbles
    • Put the lid on and turn the slow cooker onto high.
    • Cook for 2-3 hours on high until firm.

    Notes

    Line your slow cooker bowl with baking paper so you can remove the cake in one piece.

      I baked mine in a loaf tin with a drop of water in the bottom of the slow cooker. It was delicious and was very easy to slice because of its shape and depth

      Hi, this cake looks great and I want to try it this weekend for a bake off at work! My slow cooker is 6.5l, so should I double mixture or leave it as the recipe states?

        Hiya, it makes a big cake so I wouldn’t double it but put a cake tin in your sc and then you will get a round cake which looks better (for the bake off!).good luck!

      Made this today.

      This was my first attempt at a cake in the slow cooker so wasn’t sure what to expect but OMG IT IS AMAZING!!!!

      Looks nothing like the picture as my bubbles melted but it sure tastes as good as the above picture looks.

      I will be trying again.

      Have attempted this today. My house smells amazing only thing is my bubbles have all melted (and some crystallized) and the cake looks like it has little green craters all over it. Otherwise I am impressed as never cooked any cake in slowcooker before

      My aeros bubbles all melted I cooked it for 2 hours 10 mins why did they all melt ? Tastes nice though.

        Hi, I guess it was just too hot, did you freeze them first? The slow cooker I used for this cooks quite slowly so mine stayed whole luckily

      Hi. Im concerned that the greaseproof paper will catch fire. Do u put it on the bottom of the cooker? On top of margarine or just a layer of papee? X

        Hi Michelle, it won’t catch fire,it is under a moist cake mixture. I greased the pot first with butter, and normally use baking paper which can go in the oven. Good luck with your cake if you try it!

        Hi Jo, I’d cook it for a little longer until no longer soggy. On low if it has started to look like burning, and with a tea towel under the lid to absorb the condensation.

        Hi there, mine didn’t keep for long as we scoffed it! It would last same time as a usual cake I’d say, so two to three days in a tupperware box or tin. I’m not sure about freezing I’m afraid as I haven’t tried it. Ooh yes, it would look nice with Orange bubbles! Good luck!
