    No-Bake Oat Bars

    I make these no-bake oat bars for packed lunches and to take to work. Great for a quick healthy-ish snack, and made with ingredients from your kitchen cupboards, they are so easy to prepare.

    No bake oat bars drizzled with chocolate in a diamond pattern, on baking parchment.

    My kids also love these no-bake oat bars after school and it keeps them going without being full of sugar. Great in my books.

    Using almond butter to bind together the ingredients adds in lots of protein as well as flavour.

    They are so easy to make as no baking is needed so you can just mix the ingredients together then chill and you’re done.

    Also simple to throw together on the weekend for the week ahead if you are planning your meals.

    Make sure you are used to unsweetened treats if you make this, the coconut and apricot add sweetness, as do the honey and chocolate drizzle, but the overall oat bar does not taste overly sweet.

    Ingredients

    Here’s a list of the ingredients you will need. Check the recipe below for the quantities.

    • oats – preferably rolled oats but oat flakes would also work
    • desiccated coconut
    • dried apricots
    • almond butter – if you prefer you can replace this with peanut or cashew butter etc
    • honey
    • milk chocolate to drizzle over

    Step by step

    1. Mix all the ingredients except the chocolate in a large bowl.
    2. Line a loaf tin with baking paper and press the mixture into the tin.
    3. Chill in the fridge for about half an hour.
      No bake oat bars drizzled with chocolate in a diamond pattern, on baking parchment.
    4. Melt the chocolate in a pan on low heat or in a bowl in the microwave, and drizzle over the chilled mixture.
    5. Place back into the fridge until the chocolate has set then cut into bars.

    Ingredients

    • 100 g (1.25 cups) rolled oats
    • 40 g (0.5 cups) dessicated coconut
    • 25 g (0.2 cups) dried apricots chopped
    • 140 g (0.5 cups) almond butter or peanut, cashew butter etc
    • 4-5 tsp runny honey
    • 40 g (0.25 cups) chocolate melted

    Equipment

    Instructions
     

    • Mix all the ingredients except the chocolate in a large bowl.

      these look delicious and probably have just enough chocolate to tempt without too much that would make me eat the whole batch at once (though it would be tempting nevertheless)

          I will make lots of these type things, welsh cakes, pancakes, girder scones! I might even venture into Asian steamed cakes and buns! Oh to adventure and a life on the road!
          I’ve been to so many countries where people just don’t have ovens, everything is done on the hob, it’s very inspiring 🙂
