    This easy slow cooker soda bread does not require yeast or rising time and is full of cheesy flavour with the addition of fresh herbs!

    More baking in the slow cooker for me this week!

    Since baking my tropical soda bread recently I haven’t been able to shake the idea of a delicious cheesy soda bread, the ideal accompaniment to salads this summer.

    Slow cooker bread

    With slow cooker soda bread you just need to simply make the dough in a few minutes and pop it in the slow cooker.

    How to Make Slow Cooker Mozzarella and Herb Soda Bread

    Homemade bread is so easy with a recipe like this based on soda bread as it doesn’t take long at all to make the dough, and no rise time is needed.

    You also don’t need any yeast or to do a lot of kneading.

    Then just spend a couple of hours tidying up the house/picking up shoes, toys and clothes/other tasks you need to attend to (hope this isn’t just me!) and this delicious loaf will be ready for you by lunch time!

    Top tip

    My trick for making the top of the loaf brown when making slow cooker bread is to turn the loaf over half way during the cooking time.

    It may flatten the top a little but it ensures your crust is more even and prevents the top from being soggy and pale.

    Once baked the cheese is meltingly soft within the crumb of the bread and you can serve the bread simply with salads, cheese and cold meats, or on the side of a stew or soup, to be dipped in.

    Ingredients

    • self-raising flour
    • baking powder
    • salt
    • chopped parsley
    • grated mozzarella
    • black pepper 
    • milk
    • white wine vinegar
    • egg – for egg wash

    Step by step

    1. First place the milk and white wine vinegar in a jug together and leave to sit for 5-10 minutes until it thickens. These ingredients replace buttermilk in this recipe, you could also use a pot of buttermilk (usually 284 ml) if you have it.
    2. Mix the flour, baking powder, salt, pepper, parsley, mozzarella in a bowl. Slowly add the thickened milk and use a spoon to stir until it forms a soft dough. 
    3. Form into a round loaf shape, slash twice and place on baking paper in the slow cooker.
    4. Brush the loaf with the beaten egg and then cook on high for 3 hours, turning the loaf over for the last 30 minutes.

    Ingredients

    • 350 g self-raising flour
    • 2 tsp baking powder
    • 0.5 tsp salt
    • 2 handfuls chopped parsley
    • 100 g grated mozzarella
    • black pepper to taste
    • 250 ml milk

      We drink only almond milk or nut milk, can I use that in this recipe? Also, I always have regular white vinegar on hand, can I use that instead of white wine vinegar?

        Hi there yes you can use your preferred milk to make this recipe and regular white vinegar will be just fine!

        You would follow the method for a standard soda bread recipe, I tend to cook it for 35 mins approx at 180 degrees Celsius in the oven.

      Okay, at the risk of sounding stupid, do I put the lid on (never made bread before or used the slow cooker) I assume yes.
      I tried making this today but it completely stuck to the paper and was quite soggy in places. Any idea how I could make this better on another try?

        Yes the lid goes on the slow cooker! If the dough is a bit soggy then add a little more flour. You want the texture to be quite firm so you can form it into a circle. If it stuck to the paper in places this might mean you have got spots so turn the slow cooker pot around (if a round one just rotate it half a turn, if an oval one take it out, turn round half a turn and put it back in).

        Hi yes if you want to add things chopped tomatoes or peppers will work well, just make sure the tomatoes aren’t too watery.

        You can but you might risk the edges burning a bit through contact with the sides!

        Yes unbleached flour should make no difference. I have never used almond flour so couldn’t comment on that.

        I have never made it with GF flour I’m afraid and don’t know about GF baking. I would recommend you look for a GF recipe for soda bread and check the quantities etc then amend my recipe as required.

      This looks amazing. Can I leave the dough resting for a few hours before cooking? For example If i make the dough in the morn before I leave for work will it it be ok just sitting unbaked cold in slow cooker for about 6 hours before the timer kicks in and starts cooking it in time for me arriving home? Or does it need to start cooking as soon as the dough is mixed? Thanks in advance. Total bread newbie!

        I’m afraid I have never tried that before and am not sure how it would turn out! You don’t normally leave a soda bread before cooking as it doesn’t rise like a yeasted dough, so I fear it may not work.

      Ooh this does sound good. I love cheesy bread and as you say soda bread is a synch to make and always tastes good. Not sure I fancy going around picking up shoes and toys whilst I’m waiting for it to cook though 😉
