    Spiced Carrot Soup

    This spiced carrot soup is warming and full of goodness. Mild curry spices give the earthy carrots an extra boost for a cold day. Isn’t soup just the best when the temperature has dropped!

    This soup is so easy to make, all you need is carrots and onion and a few store cupboard spices.

    You can make it either in a blender/soup maker (I use a Froothie Evolve blender with cooking function) as I have here, or in a slow cooker or on the hob/stove top.

    If you don’t have a Froothie Evolve you’ll also need a blender to make the soup smooth.

    A stick blender will be fine, though it might not be as smooth as my soup made in the power blender.

    Spices

    Curried carrot soup is always a favourite so I’ve given my carrot soup recipe some curry spices in the form of cumin, coriander and garam masala.

    I also used some ground ginger as it pairs well with carrot.

    This isn’t a really spicy carrot soup because it doesn’t contain any chilli but you can add some chilli powder, chilli flakes or fresh chilli if you like a spicy soup.

    You can also add in some parsnip, sweet potato or butternut squash with the carrots for a change from carrot soup.

    Ingredients 

    Here are the ingredients you’ll need for the recipe. Get the quantities in the recipe card further down.

    • onion
    • carrots
    • ground cumin
    • ground coriander
    • garam masala
    • vegetable stock powder or cube
    • water
    • salt and pepper
    • fresh coriander to serve

    Step by step 

    1. Froothie Evolve or soup maker method

    Peel and chop the onion and carrots and place in the cooking jug.

    Fill with water to the 1.4 litre level shown on the side for soup (you’ll need approx 750 ml of water). Add the spices and vegetable stock powder.

    Put on the lid, select the Smooth Soup function and press On. The blender will cook and blend the soup in 30 minutes.

    Check the seasoning and add salt and pepper to your taste. Serve in bowls with warm bread to dip in.

    2. Slow cooker method

    Put all the ingredients in the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours.

    Blend using a stick blender or by transferring to your food processor or blender, then serve.

    3. Hob/stovetop method

    Put all the ingredients in a large saucepan and cook for approximately 20 minutes or until the carrots are soft.

    Blend using a stick blender or by transferring to your food processor or blender, then serve.

    Soup toppings

    Here are some toppings and garnishes you could try:

    • toasted pumpkin seeds or pine nuts
    • a swirl of creme fraiche or cream
    • chopped herbs – parsley, coriander, etc

    Ingredients

    • 1 onion

    Instructions 

    • Peel and chop the onion and carrots. Place them in the blender.
      1 onion, 450 g carrots
    • Add the spices and vegetable stock powder, then the water.
      0.5 tsp ground cumin, 0.5 tsp ground coriander, 0.5 tsp ground ginger, 1 tsp garam masala, 4 tsp Marigold vegetable bouillon powder, 750 ml cold water
    • Select the Smooth Soup function and press On to start.
    • After 30 minutes your soup will be ready to serve.
    • Taste the soup to check the seasoning and add salt and pepper to your taste. Garnish with a few fresh coriander leaves or a swirl of creme fraiche and serve!

      This is such a useful recipe. I always have carrots in the fridge and this soup will be a great standby when I need a quick soup. The Froothie Evolve is amazing for making smooth soups.
