So it is Good Friday and I am bringing you …..more chocolate! Well it can’t be avoided, this is the time of year for it after all. 🙂
This slow cooker chocolate and mint aero bubble cake is a cake with a difference as it is made in my slow cooker (3.5 litre oval slow cooker).
I decided to make a slow cooker chocolate and Mint Aero Bubble cake quite simply because I wanted to see the Aero Bubbles in a cake!
I have seen Maltesers and similar being used in traybakes (do make the Malteser traybake, it is delicious!) but I wanted these to go in a cake, not a no-bake or brownies. I thought the cake would look great when sliced as you would see the green circles against the dark brown chocolate cake, as well as the bubbly texture of the bubbles against the velvety cake. Well that was the idea anyway!
I saw in the traybake etc recipes that sometimes they froze the Maltesers or Aero bubbles overnight so they didn’t melt when baking. I didn’t have the patience for that so just went for it. Sometimes you just want cake then and there, am I right.
Ready to start baking! The base is lined with baking paper. I would line the sides of the pot too to make it easier to get out!
This is what it looked like after 45 mins. The edges are becoming firm and the Aero bubbles are melting! Just look at that rich chocolate colour, mmmmm.
Another hour later, after adding more Aero Bubbles in the centre. The cake is starting to firm up.
Finished, after two and a quarter hours. Yummy, rich and fudgy chocolate cake topped with minty chocolate!

Slow Cooker Chocolate and Mint Aero Bubble Cake
Ingredients
- 190 g plain flour (all-purpose flour)
- 1 tsp baking powder
- 50 g cocoa powder
- 200 g light brown sugar
- 125 g butter
- 3 eggs
- 180 ml milk I used semi-skimmed
- 1 large share bag of Mint Aero Bubbles

- Grease and line the slow cooker bowl.
- Mix the flour, baking powder and cocoa powder in a large bowl.190 g plain flour (all-purpose flour), 1 tsp baking powder, 50 g cocoa powder
- Cream the butter with the sugar then add the eggs slowly, mixing after each addition.200 g light brown sugar, 125 g butter, 3 eggs
- Add the milk and whisk until smooth.180 ml milk
- Fold in the flour mixture.
- Pour the cake batter into the slow cooker bowl.
- Add about half the Mint Aero Bubbles, scattering them over the top.1 large share bag of Mint Aero Bubbles
- Put the lid on and turn the slow cooker onto high.
- Cook for 2-3 hours on high until firm.

Hi Becky, I use whatever cocoa powder I have in ie supermarket own, Bournville, Green and Blacks.

Hi, I didn’t for this cake as I remember but do use one if you prefer, I find the tea towel helps it to cook quicker too.

What if before tipping the mixture into the slow cooker if i stirred in some of the bubbles? Do you think that’d just automatically melt the bubbles?

Also coating the bubbles after freezing means that they don’t all sink to the bottom… Also good advice for fruit in cakes 🙂

I have a 6.5l s.c would I just double up the recipe and time or would that not work. Ive never done a cake in s.c before so thanks for any tips x

Hi Becki, you could double up the amounts but it would still normally take 1-2 hours approx on high. Or you could do it in a cake tin inside your s.c. if you want a nicer shape (not so flat, and round). Good luck!

Hi, Just a quick (possibly quite blonde question); you say to grease and line the bowl of the slow cooker but in the pictures it doesn’t look like you did that? I assume you mean use grease-proof paper to cover the bottom and the sides of the bowl otherwise it wouldn’t come out? Is that right?
I’m not the biggest fan of mint aero, but want to try out making the cake in the slow cooker for sure! Thinking of other things I could exchange the aero for! Thanks, Amy

Hi Amy, yes I did butter the inside of the bowl and line it around the bottom and sides with grease proof paper (cut to shape so it fit snugly). You could also use a large cake case (get them in poundshops). Other things you can use are mars bars, maltesers, fudge pieces, choc buttons etc etc. enjoy!

Looks lovely. I’ve got a large slow cooker so I’m wondering if I could put the cake in a regular cake tin inside the cooker? If so would you need to put water in the base of the cooker around the cake tin?

Hi Susan, yes some people use a normal cake tin on top of an upturned saucer or similar, with a little water in the base of the pot. Good luck and let me know how it turns out!

I’m interested in using a normal cake tin. How much water would u put in? Should the water touch the cake tin if it is sitting on a saucer or only as far up as the saucer? This looks lovely by the way!!!!

Hi. Have cooked this for about 2 hrs 20 mins. All the top has holes in. How did you get the cake out of the slow cooker, did you leave it to cool first ??

Hi Tracey, I let it cool for a few mins then used the grease proof paper to pull it out. Then left on a rack to cool fully. Hope that helps!

Hi Helen, I use grease proof paper to line the base, and grease the sides. I find it helps when removing the cake. Let me know how you get on, glad you like the recipe!

i didnt think you could use a slow cooker unless it had water in it, is itsafe to use without liquid mine says to make sure it doesnt boil dry ?

Hi Jeanette, mine have always worked fine, one is a Crockpot which can be used dry. You could always use a metal or silicone cake pan and put some water under it if you are worried about your slow cooker cracking. Good luck!

I’ve just made it for the first time. a flat warming cake for our grandson who is leaving home tomorrow. It looks really good, can’t wait to taste it! One thing though, I stopped it with still 20 mins to go because it smelt like it may be burning. One side seems to be solid rock on the bottom but the other side feels ok. Fingers crossed!!

If you grease your slow cooker with butter then dust all over that with flour, it saves the need for greaseproof paper. 🙂
