Over the Christmas break I made a batch of white chocolate and cranberry fudge. I made it in a large loaf tin (2 lbs) as in the past I used a shallower tin and it didn’t set well.
Recipe as follows, from the Tesco magazine website:
350g granulated sugar
25g unsalted butter
175ml tin of evaporated milk
100g dried sweetened cranberries
300g white chocolate, chopped

This year I also made my first Christmas cake. We don’t particularly like traditional Christmas cakes so I chose to make a chocolate one :-).
As this type of cake doesn’t keep as well as traditional cakes which are fed with alcohol, I made it on Christmas Eve.
